Description

A comforting yet elegant dish featuring tender chicken breasts in a creamy sauce with orzo, spinach, and sun-dried tomatoes.


Ingredients

  • 2 chicken breasts
  • 1 cup orzo pasta
  • 1 cup spinach
  • 1/2 cup sun-dried tomatoes
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste


Instructions

  1. Heat the olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper, then add them to the skillet. Cook until golden and cooked through, approximately 6-7 minutes per side. Remove the chicken and set aside.
  2. Add the minced garlic and sun-dried tomatoes to the same skillet. Sauté for 1-2 minutes until fragrant.
  3. Pour in the chicken broth and bring to a boil. Stir in the orzo and cook according to package instructions until al dente.
  4. Reduce the heat. Add the heavy cream, spinach, and grated Parmesan cheese, stirring until the sauce is creamy and luscious.
  5. Slice the cooked chicken and mix it back into the skillet with the orzo mixture.

Notes
