Ingredients
- 2 chicken breasts
- 1 cup orzo pasta
- 1 cup spinach
- 1/2 cup sun-dried tomatoes
- 1 cup chicken broth
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions
- Heat the olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper, then add them to the skillet. Cook until golden and cooked through, approximately 6-7 minutes per side. Remove the chicken and set aside.
- Add the minced garlic and sun-dried tomatoes to the same skillet. Sauté for 1-2 minutes until fragrant.
- Pour in the chicken broth and bring to a boil. Stir in the orzo and cook according to package instructions until al dente.
- Reduce the heat. Add the heavy cream, spinach, and grated Parmesan cheese, stirring until the sauce is creamy and luscious.
- Slice the cooked chicken and mix it back into the skillet with the orzo mixture.
