Ingredients
- 2 cups orzo pasta
- 2 chicken breasts, diced
- 1 cup cherry tomatoes, halved
- 1 cup spinach, chopped
- 1/2 cup sun-dried tomatoes, chopped
- 1 cup Greek yogurt
- 1 cup chicken broth
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Olive oil for drizzling
- Parmesan cheese for topping
Instructions
- Preheat your oven to 375°F (190°C).
- Mix together the diced chicken, halved cherry tomatoes, chopped spinach, and sun-dried tomatoes in a large oven-safe dish.
- Add the orzo pasta followed by Greek yogurt, chicken broth, Italian seasoning, along with salt and pepper.
- Stir everything together until well incorporated.
- Drizzle some olive oil on top and give it one more mix.
- Cover the dish with foil and bake in the preheated oven for 25-30 minutes.
- Once cooked, remove the foil, sprinkle the Parmesan cheese on top, and bake for another 10 minutes until it’s golden and bubbly.
- Let the dish cool slightly before serving.
Notes
Feel free to swap the chicken for a plant-based protein or substitute spinach with kale if you prefer. Use high-quality sun-dried tomatoes for a bolder flavor.
