A comforting, hearty dish featuring tender chicken, vibrant cherry tomatoes, and wholesome orzo pasta, perfect for any occasion.

  • 2 cups orzo pasta
  • 2 chicken breasts, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach, chopped
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup Greek yogurt
  • 1 cup chicken broth
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for drizzling
  • Parmesan cheese for topping

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Mix together the diced chicken, halved cherry tomatoes, chopped spinach, and sun-dried tomatoes in a large oven-safe dish.
  3. Add the orzo pasta followed by Greek yogurt, chicken broth, Italian seasoning, along with salt and pepper.
  4. Stir everything together until well incorporated.
  5. Drizzle some olive oil on top and give it one more mix.
  6. Cover the dish with foil and bake in the preheated oven for 25-30 minutes.
  7. Once cooked, remove the foil, sprinkle the Parmesan cheese on top, and bake for another 10 minutes until it’s golden and bubbly.
  8. Let the dish cool slightly before serving.

Notes

Feel free to swap the chicken for a plant-based protein or substitute spinach with kale if you prefer. Use high-quality sun-dried tomatoes for a bolder flavor.
