Ingredients
- 2 chicken breasts
- 1 cup orzo pasta
- 2 cups chicken broth
- 2 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, chopped
- 1 cup spinach
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Olive oil (about 1 tablespoon)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Season the chicken breasts with salt and pepper, then sear them in the pan until browned on both sides.
- Remove the chicken and set it aside.
- In the same skillet, sauté minced garlic and sun-dried tomatoes for 1-2 minutes until fragrant.
- Stir in orzo and chicken broth, mixing well.
- Return the chicken to the skillet, cover, and let it simmer for about 10 minutes, or until the orzo is tender and most of the liquid is absorbed.
- Add in spinach and Italian seasoning, cooking until the spinach wilts.
- Serve hot and savor the deliciousness!
Notes
For optimal results, use fresh chicken breasts and add a squeeze of lemon juice right before serving. Leftovers can be stored in an airtight container for 3-4 days or frozen for up to 2 months.
