A comforting one-pan meal featuring tender chicken, nutty orzo, and vibrant spinach in a flavorful broth, perfect for weeknight dinners or special occasions.

Ingredients

  • 2 chicken breasts
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 2 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup spinach
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil (about 1 tablespoon)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season the chicken breasts with salt and pepper, then sear them in the pan until browned on both sides.
  3. Remove the chicken and set it aside.
  4. In the same skillet, sauté minced garlic and sun-dried tomatoes for 1-2 minutes until fragrant.
  5. Stir in orzo and chicken broth, mixing well.
  6. Return the chicken to the skillet, cover, and let it simmer for about 10 minutes, or until the orzo is tender and most of the liquid is absorbed.
  7. Add in spinach and Italian seasoning, cooking until the spinach wilts.
  8. Serve hot and savor the deliciousness!

Notes

For optimal results, use fresh chicken breasts and add a squeeze of lemon juice right before serving. Leftovers can be stored in an airtight container for 3-4 days or frozen for up to 2 months.
