Ingredients
- 4 pieces boneless skinless chicken breasts or thighs
- 4 tablespoons butter
- 4 cloves garlic, minced
- 1 cup chicken broth
- 2 tablespoons honey
- 1 teaspoon paprika
- Salt and cracked black pepper, to taste
- 1 cup caramelized onions
- 1 cup shredded cheddar or Monterey Jack cheese (optional)
- 2 tablespoons dried parsley (for garnish)
- 1 teaspoon cayenne pepper or hot sauce
- 1/2 cup heavy cream
- 1 cup cherry tomatoes and kalamata olives
Instructions
- Heat the butter in a large skillet over medium heat until melted.
- Add the minced garlic and sauté until fragrant, about 1 minute.
- Season the chicken with salt, pepper, and paprika. Place the chicken in the skillet, cooking until golden brown on both sides.
- Pour in the chicken broth, honey, and heavy cream. Bring it to a simmer.
- Stir in the caramelized onions and cherry tomatoes. Allow everything to cook for about 10-12 minutes until the chicken is cooked through and the sauce has thickened.
- Sprinkle in the shredded cheese (if using) and cayenne pepper or hot sauce. Stir to combine.
- Garnish with dried parsley before serving.
Notes
Serve with steamed vegetables, rice, or crusty bread. Leftovers can be stored for up to 3 days in an airtight container.
