Ingredients
- 4 pieces of boneless skinless chicken breasts or thighs
- 4 tablespoons butter (can be replaced with olive oil)
- 4 cloves garlic (freshly minced)
- 1 cup chicken broth (low-sodium recommended)
- 2 tablespoons honey
- 1 teaspoon paprika
- Salt to taste
- Cracked black pepper to taste
- 1 cup caramelized onions
- 1 cup shredded cheddar or Monterey Jack cheese (optional)
- 2 tablespoons dried parsley (for garnish)
- 1 teaspoon cayenne pepper or hot sauce (optional)
- 1/2 cup heavy cream
- 1 cup cherry tomatoes
- 1 cup kalamata olives
Instructions
- Begin by melting the butter in a large skillet over medium heat.
- Add the minced garlic and sauté for about 30 seconds until fragrant.
- Season the chicken with salt, black pepper, and paprika. Place the chicken in the skillet, cooking for roughly 5-6 minutes per side until golden brown and cooked through.
- Pour in the chicken broth, honey, and cream, stirring to combine. Let the sauce simmer for a few minutes until it thickens slightly.
- Add the caramelized onions, cherry tomatoes, olives, and cayenne pepper or hot sauce. Cook for another 2-3 minutes.
- If using cheese, sprinkle it over the chicken and let it melt.
- Garnish with dried parsley before serving.
Notes
Avoid overcrowding the skillet while cooking the chicken for even browning. You can also caramelize your onions in advance to save time.
