  • 4 tablespoons butter (can be replaced with olive oil)
  • 4 cloves garlic (freshly minced)
  • 1 cup chicken broth (low-sodium recommended)
  • 2 tablespoons honey
  • 1 teaspoon paprika
  • Salt to taste
  • Cracked black pepper to taste
  • 1 cup caramelized onions
  • 1 cup shredded cheddar or Monterey Jack cheese (optional)
  • 2 tablespoons dried parsley (for garnish)
  • 1 teaspoon cayenne pepper or hot sauce (optional)
  • 1/2 cup heavy cream
  • 1 cup cherry tomatoes
  • 1 cup kalamata olives

Instructions

  1. Begin by melting the butter in a large skillet over medium heat.
  2. Add the minced garlic and sauté for about 30 seconds until fragrant.
  3. Season the chicken with salt, black pepper, and paprika. Place the chicken in the skillet, cooking for roughly 5-6 minutes per side until golden brown and cooked through.
  4. Pour in the chicken broth, honey, and cream, stirring to combine. Let the sauce simmer for a few minutes until it thickens slightly.
  5. Add the caramelized onions, cherry tomatoes, olives, and cayenne pepper or hot sauce. Cook for another 2-3 minutes.
  6. If using cheese, sprinkle it over the chicken and let it melt.
  7. Garnish with dried parsley before serving.

Notes

Avoid overcrowding the skillet while cooking the chicken for even browning. You can also caramelize your onions in advance to save time.
