A comforting dish featuring tender chicken in a creamy sauce with vibrant vegetables, perfect for busy weeknights or entertaining guests.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • Cooked pasta, for serving

Instructions

  1. Place the chicken breasts in the slow cooker.
  2. Add chopped sun-dried tomatoes, fresh spinach, minced garlic, and Italian seasoning over the chicken.
  3. Pour in the heavy cream and sprinkle the grated Parmesan cheese on top.
  4. Season with salt and pepper to taste.
  5. Cover and cook on low for 4-6 hours or until the chicken is cooked through.
  6. Serve over cooked pasta and enjoy!

Feel free to experiment with different kinds of pasta, or even serve it over rice. Garnish with fresh basil or extra Parmesan.
