  • 4 boneless, skinless chicken breasts
  • 1 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Place the chicken breasts at the bottom of your slow cooker.
  2. Sprinkle the chopped sun-dried tomatoes, fresh spinach, minced garlic, Italian seasoning, and a pinch of salt and pepper over the chicken.
  3. Pour the heavy cream over the entire mixture, ensuring everything is well-covered.
  4. Cover the slow cooker and cook on low for 4-6 hours, or until the chicken is tender and cooked through.
  5. About 15 minutes before serving, stir in the grated Parmesan cheese to create a creamy sauce.
