A scrumptious chicken and mushroom dish perfect for weeknight dinners, combining earthy flavors and easy preparation.

Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 cups fresh mushrooms (cremini or button)
  • 3 garlic cloves, minced
  • 2 tablespoons olive oil
  • Fresh herbs (such as thyme or parsley)
  • Salt and pepper to taste

Instructions

  1. Start by marinating the chicken with olive oil, minced garlic, salt, and pepper for 15-30 minutes.
  2. Heat a skillet over medium heat and cook the marinated chicken until golden brown, about 5-7 minutes each side.
  3. Remove the chicken from the pan and set aside.
  4. Add more oil if needed, then sauté chopped mushrooms until they’re browned and their moisture evaporates.
  5. Stir in minced garlic and fresh herbs, then return the chicken to the pan. Cook for an additional few minutes to meld flavors.
  6. Serve warm and enjoy!

Notes

For a twist, add a splash of white wine or toss in some spinach or kale. Use a meat thermometer to check for doneness—165°F is the magic number!
