Ingredients
- 1 pound shrimp, peeled and deveined
- 1 pound smoked sausage, sliced
- 1 onion, diced
- 1 bell pepper, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 can diced tomatoes (14.5 ounces)
- 2 cups chicken broth
- 1 teaspoon Cajun seasoning
- 1 cup long-grain rice
- Salt and pepper to taste
- 2 tablespoons olive oil
- Chopped green onions for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the diced onions, bell pepper, celery, and minced garlic. Sauté until softened, about 5-7 minutes.
- Stir in the sliced sausage and cook until browned, approximately 5 minutes.
- Add the diced tomatoes, chicken broth, Cajun seasoning, and rice; bring everything to a boil.
- Reduce the heat, cover the pot, and simmer for about 20 minutes or until the rice is tender and has absorbed most of the liquid.
- Stir in the shrimp and cook for an additional 5 minutes or until the shrimp turns pink and cooked through.
- Season with salt and pepper to taste.
- Garnish with chopped green onions before serving.
