A flavorful one-pot dish that combines shrimp, smoked sausage, and aromatic vegetables, perfect for family gatherings or casual dinners.

  • 1 pound shrimp, peeled and deveined
  • 1 pound smoked sausage, sliced
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 can diced tomatoes (14.5 ounces)
  • 2 cups chicken broth
  • 1 teaspoon Cajun seasoning
  • 1 cup long-grain rice
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Chopped green onions for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the diced onions, bell pepper, celery, and minced garlic. Sauté until softened, about 5-7 minutes.
  3. Stir in the sliced sausage and cook until browned, approximately 5 minutes.
  4. Add the diced tomatoes, chicken broth, Cajun seasoning, and rice; bring everything to a boil.
  5. Reduce the heat, cover the pot, and simmer for about 20 minutes or until the rice is tender and has absorbed most of the liquid.
  6. Stir in the shrimp and cook for an additional 5 minutes or until the shrimp turns pink and cooked through.
  7. Season with salt and pepper to taste.
  8. Garnish with chopped green onions before serving.
