Ingredients
- 1 ½ lb boneless, skinless chicken thighs
- ⅓ cup BBQ sauce
- Non-stick cooking spray
- ½ teaspoon smoked paprika
- ½ teaspoon chili powder
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon black pepper
- ½ teaspoon table salt
- ½ teaspoon cayenne pepper (optional)
Instructions
- Prep the chicken: Pat the chicken thighs dry and set them aside.
- Mix the seasoning: In a small bowl, combine smoked paprika, chili powder, garlic powder, onion powder, black pepper, table salt, and cayenne, if you like some heat. Mix well.
- Season the thighs: Generously sprinkle the spice blend over the chicken and rub it into the meat for maximum flavor.
- Optional marinating: If you have the time, place the seasoned chicken in a resealable bag or covered dish with 2-3 tablespoons of BBQ sauce. Toss to coat and let it marinate for 15-30 minutes.
- Preheat the oven: Set your oven to 400°F (200°C) and prepare a baking sheet lined with parchment paper or aluminum foil. Don’t forget to coat it with non-stick cooking spray!
- Bake the chicken: Arrange the chicken thighs in a single layer on the baking sheet. Bake for 15 minutes.
- Sauce it up: Remove the chicken from the oven and generously brush the remaining BBQ sauce over each thigh.
- Finish baking: Return the chicken to the oven and bake for an additional 10-15 minutes, or until the internal temperature reaches 165°F (74°C) and the sauce is caramelized and sticky.
- Rest before serving: Allow the chicken to rest for 5-10 minutes tented with foil to keep it juicy.
