Ingredients
- 2 boneless, skinless chicken breasts
- 8 oz fettuccine or pasta of choice
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 cup spinach
- Salt and pepper to taste
- Fresh parsley, for garnish
Instructions
- In a large pot, cook the pasta according to package directions, then drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Season both sides of the chicken breasts with salt and pepper, then add them to the skillet. Cook for about 6-7 minutes on each side, or until golden and cooked through. Remove the chicken and let it rest.
- In the same skillet, add the minced garlic and sauté for about 30 seconds, just until fragrant. Pour in the heavy cream and stir to combine.
- Stir in the grated Parmesan cheese and spinach. Continue to stir until the cheese melts and the sauce thickens.
- Add the cooked pasta to the sauce, tossing well to coat. Slice the cooked chicken and place it elegantly on top of the pasta. Finish with a sprinkle of fresh parsley before serving.
Notes
For a creative twist, consider adding sun-dried tomatoes or mushrooms. To make it lighter, substitute heavy cream for Greek yogurt or opt for whole-grain pasta.
