  • 2 boneless, skinless chicken breasts
  • 8 oz fettuccine or pasta of choice
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 cup spinach
  • Salt and pepper to taste
  • Fresh parsley, for garnish

Instructions

  1. In a large pot, cook the pasta according to package directions, then drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Season both sides of the chicken breasts with salt and pepper, then add them to the skillet. Cook for about 6-7 minutes on each side, or until golden and cooked through. Remove the chicken and let it rest.
  3. In the same skillet, add the minced garlic and sauté for about 30 seconds, just until fragrant. Pour in the heavy cream and stir to combine.
  4. Stir in the grated Parmesan cheese and spinach. Continue to stir until the cheese melts and the sauce thickens.
  5. Add the cooked pasta to the sauce, tossing well to coat. Slice the cooked chicken and place it elegantly on top of the pasta. Finish with a sprinkle of fresh parsley before serving.

Notes

For a creative twist, consider adding sun-dried tomatoes or mushrooms. To make it lighter, substitute heavy cream for Greek yogurt or opt for whole-grain pasta.
