Ingredients
- 4 boneless, skinless chicken breasts
- 4 cloves fresh garlic, minced
- 1 cup long-grain white rice
- 2 cups low-sodium chicken broth
- 3 tbsp unsalted butter
- 2 tbsp fresh parsley or thyme, chopped
- 1 tbsp olive oil
- 2 tbsp low-sodium soy sauce
- Salt and pepper to taste
Instructions
- Prepare your ingredients by mincing the garlic, measuring out the rice, and trimming excess fat from the chicken.
- In a large pot, heat olive oil and butter over medium heat, then add minced garlic and sauté until fragrant, about 1 minute.
- Add chicken breasts and cook until browned on both sides, approximately 5-7 minutes.
- Stir in the rice, chicken broth, and soy sauce until well combined.
- Cover the pot, lower the heat, and simmer for about 20 minutes.
- Remove from heat and stir in chopped herbs.
- Fluff with a fork before serving.
