A comforting one-pot meal featuring tender chicken breasts simmered in garlic butter and fluffy rice.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 4 cloves fresh garlic, minced
  • 1 cup long-grain white rice
  • 2 cups low-sodium chicken broth
  • 3 tbsp unsalted butter
  • 2 tbsp fresh parsley or thyme, chopped
  • 1 tbsp olive oil
  • 2 tbsp low-sodium soy sauce
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by mincing the garlic, measuring out the rice, and trimming excess fat from the chicken.
  2. In a large pot, heat olive oil and butter over medium heat, then add minced garlic and sauté until fragrant, about 1 minute.
  3. Add chicken breasts and cook until browned on both sides, approximately 5-7 minutes.
  4. Stir in the rice, chicken broth, and soy sauce until well combined.
  5. Cover the pot, lower the heat, and simmer for about 20 minutes.
  6. Remove from heat and stir in chopped herbs.
  7. Fluff with a fork before serving.
