Ingredients
- 4 chicken breasts
- 2 medium zucchinis, sliced
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper, to taste
- Parmesan cheese (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Whisk together the olive oil, garlic powder, Italian seasoning, salt, and pepper in a large bowl.
- Add the chicken breasts and zucchini slices to the bowl, coating them generously with the olive oil mixture.
- Spread the chicken and zucchini in a single layer on a baking sheet.
- Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
- If desired, sprinkle with Parmesan cheese right before serving.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Can be frozen for up to three months.
