A delightful one-pan dish featuring juicy chicken breasts and tender zucchini, perfect for busy weeknights.

  • 4 chicken breasts
  • 2 medium zucchinis, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • Parmesan cheese (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Whisk together the olive oil, garlic powder, Italian seasoning, salt, and pepper in a large bowl.
  3. Add the chicken breasts and zucchini slices to the bowl, coating them generously with the olive oil mixture.
  4. Spread the chicken and zucchini in a single layer on a baking sheet.
  5. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  6. If desired, sprinkle with Parmesan cheese right before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Can be frozen for up to three months.
