A quick and delicious dish featuring chicken thighs marinated in lemon and garlic, perfect for a weeknight dinner.

  • 4 chicken thighs (bone-in, skin-on)
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • Juice of 1 lemon (fresh)
  • Salt and pepper to taste
  • 1 pound green beans, trimmed
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Melt the butter in a large oven-safe skillet over medium heat.
  3. Stir in the minced garlic and sauté until fragrant, about one minute.
  4. Season the chicken thighs with salt and pepper, then add them to the skillet. Sear until golden brown on both sides.
  5. Squeeze freshly juiced lemon over the chicken, then surround the thighs with trimmed green beans.
  6. Transfer the skillet to the preheated oven and bake for 20-25 minutes, until the chicken is cooked through and the green beans are tender.
  7. Garnish with fresh parsley before serving.
