Description

A quick and flavorful dish combining chicken and zesty salsa, perfect for weeknight dinners.


Ingredients

  • 4 chicken breasts (boneless and skinless preferred)
  • 1 cup salsa (choose your favorite brand or homemade)
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste


Instructions

  1. Place the chicken breasts in the Instant Pot.
  2. Pour in the salsa, then sprinkle the cumin, garlic powder, onion powder, salt, and pepper over the top.
  3. Close the lid securely and set the Instant Pot to cook on high pressure for 10 minutes.
  4. Once the cooking time is up, carefully quick release the pressure.
  5. Remove the chicken breasts from the pot and shred them using two forks.
  6. Return the shredded chicken to the pot, mixing it thoroughly with the salsa sauce.
  7. Serve warm, either in tortillas, over rice, or on its own with sides.

Notes

For deeper flavor, marinate chicken in spices and salsa for a few hours before cooking. Pair with toppings like avocado, sour cream, and shredded cheese.
