A quick and satisfying Instant Pot chicken fajita recipe that combines vibrant flavors and simplicity for a delicious weeknight dinner.

  • 1 pound of chicken breast, sliced
  • 1 bell pepper (any color), sliced
  • 1 onion, sliced
  • 2 tablespoons fajita seasoning
  • 1 cup chicken broth
  • Tortillas for serving
  • Optional toppings: sour cream, avocado, cheese, salsa

Instructions

  1. Add the sliced chicken to the Instant Pot.
  2. Toss in the sliced bell pepper and onion.
  3. Sprinkle the fajita seasoning over the top and pour in the chicken broth.
  4. Close the lid securely, making sure the valve is set to sealing.
  5. Set the Instant Pot on high pressure for 10 minutes.
  6. Once cooking time is complete, allow for a natural release for about 5 minutes, then switch to quick release for any remaining pressure.
  7. Open the lid and stir everything well.
