Description

A creamy and flavorful chicken dish made in the Instant Pot that is perfect for busy weeknights or gatherings.


Ingredients

  • 2 lbs chicken breasts
  • 1 packet ranch seasoning
  • 8 oz cream cheese
  • 1 cup shredded cheddar cheese
  • 1/2 cup bacon bits
  • 1/4 cup green onions, for garnish
  • 1/2 cup chicken broth


Instructions

  1. Place the chicken breasts in the Instant Pot.
  2. Sprinkle the ranch seasoning evenly over the chicken.
  3. Add cream cheese, chicken broth, and bacon bits around the chicken in the pot.
  4. Close the Instant Pot lid and set it to manual high pressure; cook for 12 minutes.
  5. Once the timer goes off, carefully quick release the pressure.
  6. Using two forks, shred the chicken inside the pot.
  7. Stir in the shredded cheddar cheese until it melts, blending into the sauce.
  8. Serve and enjoy!

Notes

For a lighter version, substitute Greek yogurt for cream cheese. This recipe is flexible; try different proteins or veggies.
