A creamy and flavorful chicken dish made in the Instant Pot that is perfect for busy weeknights or gatherings.
Ingredients
- 2 lbs chicken breasts
- 1 packet ranch seasoning
- 8 oz cream cheese
- 1 cup shredded cheddar cheese
- 1/2 cup bacon bits
- 1/4 cup green onions, for garnish
- 1/2 cup chicken broth
Instructions
- Place the chicken breasts in the Instant Pot.
- Sprinkle the ranch seasoning evenly over the chicken.
- Add cream cheese, chicken broth, and bacon bits around the chicken in the pot.
- Close the Instant Pot lid and set it to manual high pressure; cook for 12 minutes.
- Once the timer goes off, carefully quick release the pressure.
- Using two forks, shred the chicken inside the pot.
- Stir in the shredded cheddar cheese until it melts, blending into the sauce.
- Serve and enjoy!
Notes
For a lighter version, substitute Greek yogurt for cream cheese. This recipe is flexible; try different proteins or veggies.
