Description

A delightful dish featuring marinated chicken breasts in a sweet and spicy hot honey glaze, served over rice or quinoa with mixed vegetables.


Ingredients

  • 2 chicken breasts
  • 1/4 cup hot honey
  • 2 cups cooked rice or quinoa
  • 2 cups mixed vegetables (bell peppers, broccoli, carrots, etc.)
  • Salt and pepper to taste
  • Olive oil for sautéing


Instructions

  1. Marinate the chicken breasts in hot honey for at least 30 minutes.
  2. Cook the marinated chicken in a pan with olive oil over medium heat for 6-7 minutes on each side.
  3. Rest the chicken for a few minutes before slicing.
  4. Sauté the mixed vegetables in the same pan with salt and pepper until tender.
  5. Assemble the bowls by placing rice or quinoa, topping with sliced chicken and sautéed vegetables.

Notes

Feel free to adjust the hot honey based on your spice preference. Leftovers can be stored in an airtight container for up to three days.
