Ingredients
- 4 chicken breasts
- 1 cup Honey BBQ sauce
- 2 pounds potatoes
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Season your chicken breasts generously with salt and pepper. Place them in a baking dish and pour Honey BBQ sauce over the chicken.
- Wash and cut the potatoes into wedges. Toss them with olive oil, minced garlic, salt, and pepper in a bowl.
- Arrange the potatoes around the chicken in the baking dish.
- Bake for 25-30 minutes or until the chicken is cooked and the potatoes are tender.
- Remove from the oven and sprinkle cheddar and Parmesan cheese over the potatoes. Return to the oven for another 5-10 minutes to melt the cheese.
- Garnish with fresh parsley before serving.
Notes
Leftovers can be stored in an airtight container for 3-4 days or frozen for up to 3 months. To reheat, bake until warmed through.
