Ingredients
- 2 cups cooked, shredded chicken
- 1 can diced green chiles
- 1 cup sour cream
- 1 cup shredded cheese (Cheddar or Monterey Jack)
- 1 can black beans, drained and rinsed
- 10 corn tortillas, torn into strips
- 1 cup corn kernels
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Olive oil or cooking spray
Instructions
- Preheat your oven to 350°F (175°C) and grease a baking dish with olive oil or cooking spray.
- In a large bowl, combine the shredded chicken, diced green chiles, sour cream, half of the cheese, black beans, corn, garlic powder, onion powder, salt, and pepper.
- Tear the corn tortillas into strips and gently fold them into the chicken mixture.
- Pour the mixture into the prepared baking dish and spread it evenly.
- Top with the remaining cheese.
- Bake for 25-30 minutes, or until bubbly and the cheese is melted and golden.
- Let cool for a few minutes before serving.
Notes
Can substitute chicken with turkey or add more beans for a vegetarian option. Top with cilantro, avocado, or a dollop of sour cream before serving.
