  • 2 lbs boneless, skinless chicken breasts, cut into 1-inch thick pieces
  • 2 tablespoons extra virgin olive oil
  • 4 tablespoons unsalted butter
  • 6 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup low sodium chicken broth
  • 1 cup grated Parmesan cheese (plus extra for serving)
  • 1 teaspoon dried Italian herbs
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the chicken: Pat the chicken pieces dry with paper towels and season with salt and black pepper.
  2. Sear the chicken: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat and sear the chicken pieces for about 3-4 minutes per side.
  3. Remove the chicken and set aside once cooked through.
  4. Sauté the garlic: In the same skillet, add 1 tablespoon olive oil and butter. Once melted, add the minced garlic and sauté for 1-2 minutes.
  5. Create the Parmesan sauce: Pour in heavy cream and chicken broth, bring to a simmer, then stir in Parmesan, dried herbs, and red pepper flakes.
  6. Combine chicken and sauce: Return chicken to the skillet, coating it in the creamy sauce, and simmer for 2-3 minutes.
  7. Garnish and serve: Remove from heat, garnish with fresh parsley, and serve while hot.
