Ingredients
- 2 chicken breasts
- 2 cups broccoli florets
- 2 cups fresh spinach
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 tablespoon soy sauce (optional)
Instructions
- Start by heating olive oil in a large skillet over medium heat.
- Season the chicken breasts with salt and pepper. Once the oil is warm, add the chicken to the skillet. Sear until golden brown and fully cooked, about 6-7 minutes per side.
- When the chicken is cooked, remove it from the skillet and set it aside.
- In the same skillet, add the minced garlic and sauté for about a minute until it’s fragrant.
- Toss in the broccoli florets and cook for 3-4 minutes until they are slightly tender.
- Stir in the fresh spinach and cook until it wilts.
- Slice the chicken and return it to the skillet with the vegetables.
- Drizzle soy sauce (if using) over the mixture and toss everything to combine.

Notes
For perfectly cooked chicken, use a meat thermometer to check for an internal temperature of 165°F. To enhance garlic flavor, add more minced garlic as desired.
