  • 2 chicken breasts
  • 2 cups broccoli florets
  • 2 cups fresh spinach
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 tablespoon soy sauce (optional)

Instructions

  1. Start by heating olive oil in a large skillet over medium heat.
  2. Season the chicken breasts with salt and pepper. Once the oil is warm, add the chicken to the skillet. Sear until golden brown and fully cooked, about 6-7 minutes per side.
  3. When the chicken is cooked, remove it from the skillet and set it aside.
  4. In the same skillet, add the minced garlic and sauté for about a minute until it’s fragrant.
  5. Toss in the broccoli florets and cook for 3-4 minutes until they are slightly tender.
  6. Stir in the fresh spinach and cook until it wilts.
  7. Slice the chicken and return it to the skillet with the vegetables.
  8. Drizzle soy sauce (if using) over the mixture and toss everything to combine.
  9. Serve warm and enjoy your healthy meal!

Notes

For perfectly cooked chicken, use a meat thermometer to check for an internal temperature of 165°F. To enhance garlic flavor, add more minced garlic as desired.
