Ingredients
- 1 pound chicken breast, cut into chunks
- 1 package gnocchi (16 ounces)
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup spinach (optional)
- Salt and pepper to taste
- Parmesan cheese for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add the chicken chunks, cooking until they’re golden brown and cooked through, about 5-7 minutes. Season with salt and pepper as they cook.
- Stir in the minced garlic, cooking for another 1-2 minutes until fragrant.
- Pour in the chicken broth and bring it to a gentle simmer.
- Add the gnocchi and cook per package instructions, usually around 2-3 minutes, until they float to the top.
- Stir in the heavy cream and spinach (if you’re using it), allowing the spinach to wilt.
- Let it simmer for another 2-3 minutes until the sauce thickens slightly.
- Serve warm, garnished with freshly grated Parmesan cheese.
Notes
For a vegetarian option, omit the chicken. Add sun-dried tomatoes or mushrooms for creative twists.
