Description

Ingredients

  • 1 pound chicken breast, cut into chunks
  • 1 package gnocchi (16 ounces)
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup spinach (optional)
  • Salt and pepper to taste
  • Parmesan cheese for garnish


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the chicken chunks, cooking until they’re golden brown and cooked through, about 5-7 minutes. Season with salt and pepper as they cook.
  3. Stir in the minced garlic, cooking for another 1-2 minutes until fragrant.
  4. Pour in the chicken broth and bring it to a gentle simmer.
  5. Add the gnocchi and cook per package instructions, usually around 2-3 minutes, until they float to the top.
  6. Stir in the heavy cream and spinach (if you’re using it), allowing the spinach to wilt.
  7. Let it simmer for another 2-3 minutes until the sauce thickens slightly.
  8. Serve warm, garnished with freshly grated Parmesan cheese.

Notes

For a vegetarian option, omit the chicken. Add sun-dried tomatoes or mushrooms for creative twists.
