A tender and flavorful Garlic Butter Chicken recipe made in a slow cooker, perfect for busy weeknights or special gatherings.
Ingredients
- 2 lbs boneless, skinless chicken breasts or thighs
- 1.5 lbs baby red potatoes, quartered
- 1 lb whole carrots, peeled and cut into chunks
- 6 cloves garlic, minced
- 1/2 cup (1 stick) unsalted butter, melted
- 1 tbsp Italian seasoning
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp chopped parsley (optional, for garnish)
- 1/2 cup chicken broth
Instructions
- Prep the ingredients by tossing the chicken, potatoes, and carrots into your slow cooker.
- Mix the garlic butter sauce by combining melted butter, minced garlic, Italian seasoning, salt, pepper, and chicken broth until well mixed.
- Pour the garlic butter mixture over the chicken and veggies, then gently stir to coat everything.
- Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours until the chicken is cooked through and tender.
- If desired, garnish with fresh parsley before serving. Plate up and enjoy!
Notes
For extra flavor, add a splash of lemon juice or a sprinkle of parmesan cheese before serving. You can also use frozen chicken but extend the cooking time slightly.
