A tender and flavorful Garlic Butter Chicken recipe made in a slow cooker, perfect for busy weeknights or special gatherings.

  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1.5 lbs baby red potatoes, quartered
  • 1 lb whole carrots, peeled and cut into chunks
  • 6 cloves garlic, minced
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 tbsp Italian seasoning
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp chopped parsley (optional, for garnish)
  • 1/2 cup chicken broth

Instructions

  1. Prep the ingredients by tossing the chicken, potatoes, and carrots into your slow cooker.
  2. Mix the garlic butter sauce by combining melted butter, minced garlic, Italian seasoning, salt, pepper, and chicken broth until well mixed.
  3. Pour the garlic butter mixture over the chicken and veggies, then gently stir to coat everything.
  4. Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours until the chicken is cooked through and tender.
  5. If desired, garnish with fresh parsley before serving. Plate up and enjoy!

Notes

For extra flavor, add a splash of lemon juice or a sprinkle of parmesan cheese before serving. You can also use frozen chicken but extend the cooking time slightly.
