Description
A high-protein dish featuring tender chicken in garlic butter, paired with creamy potatoes.
Ingredients
- 1.5 lbs boneless chicken breast or thighs, cubed
- 2 tbsp garlic (minced)
- 2 tbsp butter
- 1 tbsp olive oil
- Salt, pepper, paprika, and parsley to taste
- 3 medium red or Yukon potatoes, diced
- 1/2 cup plain Greek yogurt or light sour cream
- 1 tbsp Dijon mustard
- 1 tsp garlic powder
- 1 tsp dried herbs (thyme or parsley)
- Additional salt and pepper to taste
Instructions
- Boil the diced potatoes in salted water until tender, approximately 10–12 minutes. Drain and cool slightly.
- In a bowl, mix Greek yogurt, Dijon mustard, dried herbs, garlic powder, and seasoning. Fold in cooked potatoes until well-coated.
- Heat olive oil in a skillet over medium heat, add cubed chicken, season well, and cook until golden and fully cooked (6-8 minutes).
- Lower heat, stir in minced garlic and butter, and cook for an additional 1–2 minutes until garlic is fragrant.
- Divide chicken and creamy potatoes into meal prep containers, garnishing with extra parsley if desired.
Notes
For a creamier texture, use red or Yukon potatoes. Don’t rush cooking the chicken to achieve a golden color.
