Garlic Butter Chicken & Creamy Potatoes

A high-protein dish featuring tender chicken in garlic butter, paired with creamy potatoes.

Ingredients

  • 1.5 lbs boneless chicken breast or thighs, cubed
  • 2 tbsp garlic (minced)
  • 2 tbsp butter
  • 1 tbsp olive oil
  • Salt, pepper, paprika, and parsley to taste
  • 3 medium red or Yukon potatoes, diced
  • 1/2 cup plain Greek yogurt or light sour cream
  • 1 tbsp Dijon mustard
  • 1 tsp garlic powder
  • 1 tsp dried herbs (thyme or parsley)
  • Additional salt and pepper to taste

Instructions

  1. Boil the diced potatoes in salted water until tender, approximately 10–12 minutes. Drain and cool slightly.
  2. In a bowl, mix Greek yogurt, Dijon mustard, dried herbs, garlic powder, and seasoning. Fold in cooked potatoes until well-coated.
  3. Heat olive oil in a skillet over medium heat, add cubed chicken, season well, and cook until golden and fully cooked (6-8 minutes).
  4. Lower heat, stir in minced garlic and butter, and cook for an additional 1–2 minutes until garlic is fragrant.
  5. Divide chicken and creamy potatoes into meal prep containers, garnishing with extra parsley if desired.

Notes

For a creamier texture, use red or Yukon potatoes. Don’t rush cooking the chicken to achieve a golden color.
