A comforting and creamy chicken dish cooked in a crock pot, perfect for busy weeknights or family gatherings.
Ingredients
- 2 pounds boneless, skinless chicken breasts
- 1 packet ranch seasoning mix
- 8 ounces cream cheese
- 1/2 cup chicken broth
- 1 cup shredded cheddar cheese
- 1/2 cup cooked bacon, crumbled
- Green onions for garnish
Instructions
- Place the chicken breasts in the crock pot.
- Sprinkle the ranch seasoning mix evenly over the chicken.
- Add the cream cheese on top of the chicken.
- Pour the chicken broth around the edges of the chicken.
- Cover and cook on low for 6-8 hours or on high for about 4 hours.
- After cooking, shred the chicken with two forks and mix in the shredded cheddar cheese and crumbled bacon.
- Serve over rice, in sandwiches, or with your favorite crackers.
- Garnish with chopped green onions before serving.
Notes
For added flavor, sear your chicken before cooking. You can substitute chicken with thighs, or use Greek yogurt instead of cream cheese.
