Description

A comforting and creamy chicken dish cooked in a crock pot, perfect for busy weeknights or family gatherings.


Ingredients

  • 2 pounds boneless, skinless chicken breasts
  • 1 packet ranch seasoning mix
  • 8 ounces cream cheese
  • 1/2 cup chicken broth
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked bacon, crumbled
  • Green onions for garnish


Instructions

  1. Place the chicken breasts in the crock pot.
  2. Sprinkle the ranch seasoning mix evenly over the chicken.
  3. Add the cream cheese on top of the chicken.
  4. Pour the chicken broth around the edges of the chicken.
  5. Cover and cook on low for 6-8 hours or on high for about 4 hours.
  6. After cooking, shred the chicken with two forks and mix in the shredded cheddar cheese and crumbled bacon.
  7. Serve over rice, in sandwiches, or with your favorite crackers.
  8. Garnish with chopped green onions before serving.

Notes

For added flavor, sear your chicken before cooking. You can substitute chicken with thighs, or use Greek yogurt instead of cream cheese.
