Description

A delightful one-pan dish combining savory chicken sausage, hearty pasta, and fresh spinach in a creamy sauce, perfect for quick weeknight dinners.


Ingredients

  • 1 pound chicken sausage, sliced
  • 1 tablespoon olive oil
  • 1 small yellow onion, chopped
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, drained and chopped
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon red pepper flakes (optional)
  • 12 ounces penne or rotini pasta
  • 3 cups chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • Salt and black pepper to taste


Instructions

  1. Heat the olive oil over medium-high heat in a large skillet.
  2. Add the sliced chicken sausage and cook until browned, about 5 minutes. Remove and set aside.
  3. Add the chopped onion and cook for about 3 minutes until soft.
  4. Stir in the garlic, sun-dried tomatoes, Italian seasoning, smoked paprika, and red pepper flakes, cooking for 1 minute until fragrant.
  5. Add the pasta and chicken broth; bring to a boil. Reduce heat, cover, and simmer for 10-12 minutes, stirring occasionally.
  6. Once the pasta is nearly tender, stir in the heavy cream and Parmesan; cook for about 2 more minutes until slightly thickened.
  7. Return the chicken sausage and stir in the spinach; cook until wilted, about 1 minute.
  8. Season with salt and pepper to taste and serve hot.
