A quick and delicious chicken dinner featuring tender breasts in a creamy garlic and mushroom sauce, perfect for busy weeknights.

Ingredients

Scale
  • 2 chicken breasts
  • 2 cups mushrooms, sliced
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Season the chicken breasts with salt and pepper, then add them to the pan. Cook until golden brown and cooked through, about 6-7 minutes per side. Remove the chicken and set aside.
  3. Add the sliced mushrooms to the same pan, sautéing until golden brown, around 5 minutes.
  4. Stir in the minced garlic and cook for an additional minute.
  5. Pour in the heavy cream and simmer for 2-3 minutes until the sauce thickens slightly.
  6. Return the chicken to the pan, coating it with the creamy sauce. Cook for another minute to heat everything through.
  7. Garnish with fresh parsley before serving.

Notes

For a lighter option, you can substitute the heavy cream with half-and-half or coconut milk. Feel free to use chicken thighs instead of breasts.
