  • 1 cup spinach (fresh or frozen, thawed)

Instructions

  1. Cook the gluten-free pasta according to the package instructions. Drain and set aside.
  2. Heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about a minute until fragrant.
  3. Stir in the spinach, and let it wilt down.
  4. Reduce the heat, then add the dairy-free cream. Stir to combine.
