A comforting and flavorful soup made with chicken, spices, and creamy goodness, perfect for busy weeknights.
Ingredients
- 1 pound chicken breast
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 can diced tomatoes with green chilies
- 1 packet taco seasoning
- 1 cup chicken broth
- 8 oz cream cheese
- Salt and pepper to taste
- Chopped cilantro for garnish
Instructions
- Place the chicken breast at the bottom of the slow cooker.
- Layer the black beans, corn, diced tomatoes, taco seasoning, and chicken broth on top.
- Cover and let it cook on low for 6-8 hours or on high for 3-4 hours.
- About 30 minutes before serving, add in the cream cheese to melt.
- When the chicken is cooked, shred it in the pot and stir everything together.
- Season with salt and pepper to taste.
- Serve hot, topped with fresh chopped cilantro.
Notes
For a richer flavor, add a splash of lime juice before serving. For extra heat, mix in jalapeños or hot sauce.
