Crockpot Creamy Chicken Taco Soup

A comforting and flavorful soup made with chicken, spices, and creamy goodness, perfect for busy weeknights.

Ingredients

  • 1 pound chicken breast
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 1 cup chicken broth
  • 8 oz cream cheese
  • Salt and pepper to taste
  • Chopped cilantro for garnish

Instructions

  1. Place the chicken breast at the bottom of the slow cooker.
  2. Layer the black beans, corn, diced tomatoes, taco seasoning, and chicken broth on top.
  3. Cover and let it cook on low for 6-8 hours or on high for 3-4 hours.
  4. About 30 minutes before serving, add in the cream cheese to melt.
  5. When the chicken is cooked, shred it in the pot and stir everything together.
  6. Season with salt and pepper to taste.
  7. Serve hot, topped with fresh chopped cilantro.

Notes

For a richer flavor, add a splash of lime juice before serving. For extra heat, mix in jalapeños or hot sauce.
