A delightful blend of juicy chicken breasts, vibrant bell peppers, and zesty tomatoes, all cooked effortlessly in a CrockPot.

Ingredients

  • 1.5 lbs boneless skinless chicken breasts
  • 3 bell peppers (various colors), sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 packet fajita seasoning mix
  • 1 can diced tomatoes with green chilies
  • Salt and pepper to taste
  • Warm tortillas for serving
  • Toppings (e.g., sour cream, cheese, guacamole) for serving

Instructions

  1. Place the chicken breasts at the bottom of the CrockPot.
  2. Layer the sliced bell peppers, onion, and minced garlic over the chicken.
  3. Sprinkle the fajita seasoning evenly across the top of the mixture.
  4. Pour the diced tomatoes with green chilies over everything.
  5. Season with salt and pepper to taste.
  6. Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is cooked through and tender.
  7. Once finished, shred the chicken using two forks before serving.
  8. Serve warm with tortillas and your favorite toppings.

Notes
