Ingredients
- 4 chicken breasts
- 1 cup sun-dried tomatoes
- 4 cloves garlic, minced
- 1 cup Parmesan cheese, grated
- 1 cup heavy cream
- Salt and pepper to taste
- 1 tablespoon olive oil
- Fresh basil for garnish (optional)
Instructions
- In your crock pot, heat the olive oil over medium heat and add in the minced garlic. Sauté for a minute until fragrant.
- Place the chicken breasts directly into the crock pot.
- Layer in the sun-dried tomatoes, followed by the heavy cream, and sprinkle the grated Parmesan cheese generously on top.
- Season with salt and pepper to taste.
- Cover the crock pot and set it to cook on low for 6-8 hours or high for 3-4 hours until the chicken is cooked through and fork-tender.
- Garnish with fresh basil before serving, if desired.
Notes
For extra flavor, consider marinating the chicken in Italian herbs before cooking. You can substitute the heavy cream with half-and-half or coconut cream for a lighter version.
