A creamy and flavorful chicken dish cooked low and slow in a crock pot, featuring sun-dried tomatoes and Parmesan cheese.

  • 4 chicken breasts
  • 1 cup sun-dried tomatoes
  • 4 cloves garlic, minced
  • 1 cup Parmesan cheese, grated
  • 1 cup heavy cream
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Fresh basil for garnish (optional)

Instructions

  1. In your crock pot, heat the olive oil over medium heat and add in the minced garlic. Sauté for a minute until fragrant.
  2. Place the chicken breasts directly into the crock pot.
  3. Layer in the sun-dried tomatoes, followed by the heavy cream, and sprinkle the grated Parmesan cheese generously on top.
  4. Season with salt and pepper to taste.
  5. Cover the crock pot and set it to cook on low for 6-8 hours or high for 3-4 hours until the chicken is cooked through and fork-tender.
  6. Garnish with fresh basil before serving, if desired.

Notes

For extra flavor, consider marinating the chicken in Italian herbs before cooking. You can substitute the heavy cream with half-and-half or coconut cream for a lighter version.
