Tender chicken thighs in a rich, flavorful bourbon sauce, perfect for busy weeknights.

  • 4 chicken thighs (boneless or bone-in)
  • 1/2 cup bourbon
  • 1/4 cup soy sauce (low-sodium optional)
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1/4 cup brown sugar
  • 1 tablespoon cornstarch (optional for thickening)
  • Green onions (for garnish)

Instructions

  1. Place the chicken thighs in your slow cooker.
  2. In a separate bowl, whisk together the bourbon, soy sauce, minced garlic, ginger, and brown sugar until blended.
  3. Pour the sauce mixture over the chicken, ensuring it’s well coated.
  4. Cover the slow cooker and cook on low for 6-7 hours or on high for 3-4 hours.
  5. If desired, mix cornstarch with a little water to form a slurry and stir it into the slow cooker for a thicker sauce. Cook on high for an additional 30 minutes.
