Description
Deliciously crispy tostadas topped with seasoned rotisserie chicken, creamy refried beans, fresh toppings, and melted cheese.
Ingredients
- 4 tostada shells
- 2 cups rotisserie chicken, shredded
- 1 cup refried beans (or black beans)
- 1 cup shredded lettuce
- 1 cup diced tomatoes
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1/2 cup sour cream
- 1/4 cup salsa
- Olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Arrange the tostada shells on a baking sheet.
- Brush each tostada shell lightly with olive oil and sprinkle them with salt.
- Bake in the oven for about 5-7 minutes until they’re crispy and lightly golden.
- In a bowl, mix the shredded rotisserie chicken with some salsa, adding salt and pepper to taste for extra flavor.
- Spread a generous layer of refried beans on each tostada shell.
- Top with the chicken mixture, followed by the shredded lettuce, diced tomatoes, and a sprinkle of cheese.
- Return the tostadas to the oven for another 5 minutes or until the cheese melts beautifully.
- Serve hot with sour cream on the side for a creamy finish.
Notes
For extra crunch, double-bake the shells for an additional 2 minutes after adding toppings. Store leftovers in an airtight container for up to 3 days.
