Description
A flavor-packed dish elevating chicken breast with tangy dill pickles and a crunchy Parmesan coating.
Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup dill pickle juice
- 1 cup seasoned breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/2 cup all-purpose flour
- 2 large eggs, whisked
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp paprika
- Salt and pepper, to taste
- Cooking oil, for frying
Instructions
- Marinate the Chicken: Place chicken breasts in a shallow dish and cover with dill pickle juice. Marinate in the fridge for 30 minutes to 2 hours.
- Prep the Coating Stations: Set up three shallow dishes with flour mixture, whisked eggs, and the breadcrumb-Parmesan mixture.
- Coat the Chicken: Remove marinated chicken, pat dry, dredge in flour, dip in egg, and coat with breadcrumb mixture.
- Heat the Oil: In a skillet, heat about 1/2 inch of oil over medium-high heat.
- Fry the Chicken: Fry each side of the chicken for about 5–7 minutes until golden brown and cooked through (165°F internal temperature).
- Drain: Transfer to a wire rack to drain excess oil before serving and let rest a few minutes.
Notes
Allow chicken to marinate longer for enhanced flavor. Monitor oil temperature for best results.
