A flavor-packed dish elevating chicken breast with tangy dill pickles and a crunchy Parmesan coating.

  • 4 boneless, skinless chicken breasts
  • 1 cup dill pickle juice
  • 1 cup seasoned breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup all-purpose flour
  • 2 large eggs, whisked
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp paprika
  • Salt and pepper, to taste
  • Cooking oil, for frying

Instructions

  1. Marinate the Chicken: Place chicken breasts in a shallow dish and cover with dill pickle juice. Marinate in the fridge for 30 minutes to 2 hours.
  2. Prep the Coating Stations: Set up three shallow dishes with flour mixture, whisked eggs, and the breadcrumb-Parmesan mixture.
  3. Coat the Chicken: Remove marinated chicken, pat dry, dredge in flour, dip in egg, and coat with breadcrumb mixture.
  4. Heat the Oil: In a skillet, heat about 1/2 inch of oil over medium-high heat.
  5. Fry the Chicken: Fry each side of the chicken for about 5–7 minutes until golden brown and cooked through (165°F internal temperature).
  6. Drain: Transfer to a wire rack to drain excess oil before serving and let rest a few minutes.

Notes

Allow chicken to marinate longer for enhanced flavor. Monitor oil temperature for best results.
