Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup dill pickle juice
- 1 cup seasoned breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/2 cup all-purpose flour
- 2 large eggs, whisked
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp paprika
- Salt and pepper, to taste
- Cooking oil, for frying
Instructions
- Marinate the Chicken: Place the chicken breasts in a shallow dish or a zip-top bag. Pour in the dill pickle juice, ensuring all the chicken is submerged. Marinate in the fridge for 30 minutes to 2 hours.
- Prepare the Dredging Stations: Set up three shallow dishes: one with flour, garlic powder, onion powder, paprika, salt, and pepper; one with whisked eggs; and one with seasoned breadcrumbs and grated Parmesan cheese.
- Dredge the Chicken: Remove the chicken from the brine, pat it dry, and coat each breast in the flour mixture, dip in egg, and press into the breadcrumb-Parmesan mixture.
- Fry the Chicken: Heat oil in a large skillet. Once hot, add the coated chicken breasts and fry for 5–7 minutes per side, until golden brown and fully cooked.
- Drain and Rest: Transfer the fried chicken to a wire rack to drain excess oil. Let it rest for a few minutes before serving.
