Ingredients
- 4 chicken breasts
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup spinach
- 1/2 cup sun-dried tomatoes
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Parmesan cheese, for topping
Instructions
- In a large skillet, heat the olive oil over medium heat.
- Season the chicken breasts generously with salt and pepper. Add them to the skillet and cook for about 6-7 minutes on each side until they are golden brown and fully cooked through. Remove from the skillet and set aside.
- In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant.
- Toss in the sun-dried tomatoes and spinach, stirring until the spinach wilts.
- Pour in the heavy cream and add the Italian seasoning. Mix everything together until well combined.
- Return the chicken to the skillet, ensuring it’s nicely coated in the creamy sauce.
- Let it simmer for a few minutes, then sprinkle generously with Parmesan cheese before serving.
